Banana Bread Breakfast Cookies
🍪💚 I love eating healthy, but I also love making food my whole family enjoys. There are times that my “better-for-you” sweet recipes don’t always win them over—but these cookies were an absolute HIT! 🙌

Ingredients:
2 Bananas
1/2 cup Nut butter
2 tbs Honey (I used maple syrup, I don’t use honey)
2 cups Old fashioned oats
1 cup Protein powder (Gnarly Whey Protein Vanilla- you can use code Mule20 for 20% off)
2 eggs
1/2 cup almond flour (I use Caputo gluten free flour)
1/2 tsp Salt
1/2 tsp Baking soda
I added cinnamon & vanilla to the wet ingredients
Optional:
1/4 cup Chocolate chips (I use Lily’s sugar free chocolate chips)
Directions:
Preheat oven to 350 degrees. Line a baking pan with parchment paper or foil, and spray with cooking spray.
In a medium mixing bowl, mash banana until smooth. Add peanut butter and honey and stir to combine. Add in the rest of the ingredients and stir until completely combined. Stir in chocolate chips and additional sweetener if desired.
Drop cookie dough onto pan, forming 8 cookies into desired shape on the prepared baking sheet, (note: they will not spread or change shape much from how you originally form them). Bake for 18-22 minutes, or until edges start to turn lightly golden brown.
I like to make a double batch and freeze the extra for my husband to grab and take for his work lunches. Enjoy!
