Cottage Cheese Pancakes- Protein
I absolutely love these pancakes. They taste like soft vanilla birthday cake - moist, fluffy, and truly delicious. They’re so good on their own that you don’t even need syrup or butter, though I’ll add a drizzle of real maple syrup when the mood strikes. Perfect for those days when your body is craving carbs and your legs are ready to be fueled for a run.
Ingredients
1 1/4 cup gluten free flour (this is what I use)
2 teaspoons baking powder
1 1/4 cup cottage cheese
3 large eggs
2 Tablespoons milk
1 Tablespoon maple syrup (plus more for serving)
1 teaspoon vanilla extract
Instructions
In a large bowl, whisk together the dry ingredients.
Add the cottage cheese, eggs, and milk to a blender and blend until smooth.
Pour the blended mixture into the dry ingredients and stir gently until just combined.
Stir in the maple syrup and vanilla.
Heat a non-stick skillet over medium heat. Scoop batter into the pan and cook until the edges look set and small bubbles begin to form on the surface.
Flip and cook for another 1–2 minutes, until lightly golden and cooked through.
Enjoy! I eat 2-3 at a time, then freeze the rest to warm up the next time my legs need fuel!
