No-Bake Greek Yogurt Chocolate Peanut Butter Bars
Some jobs keep you at a desk. My husband’s job is more like an all-day gym workout.
He’s a truck driver who delivers full semi loads of food to restaurants, and every case gets loaded, unloaded, and delivered by hand. From the first stop to the last, it’s constant lifting, moving, and hauling. By the end of the day he’s burned a lot of calories, which means his body needs real fuel to keep going. *Scroll down to bottom of page to see photos of some of his truck stops & stories!
That’s why I try to pack his lunch with foods that give him steady energy and good nutrition, not just quick convenience.
These Truck Driver Protein Bars started as a simple kitchen experiment for his lunch box. I wanted something hearty, easy to grab between stops, and packed with ingredients that actually fuel a hardworking body. The result is a thick, satisfying bar made with oats, peanut butter, chocolate, Greek yogurt, and protein powder.
They’re sturdy, filling, and they freeze really well, which makes them perfect for meal prep. I make a batch, slice them up, and he just pulls a few out at a time to toss into his lunch box for the day.
Sometimes the best recipes don’t start in a fancy kitchen. They start with a simple goal: take care of the people who work hard for us every day.
Ingredients
• 16 oz jar Smucker’s Natural Peanut Butter
• 2 cups plain Greek yogurt
• 1/2 cup maple syrup
• 4 scoops chocolate protein powder
• 1/4 cup unsweetened cocoa powder
• 4 cups rolled oats
• 1/2 cup dark chocolate chips - or more if you like! (plus extra for topping)
Directions
Blend the Base
Add the peanut butter, Greek yogurt, maple syrup, protein powder, and cocoa powder to a food processor. Blend until smooth and thick.
Add the Oats
Transfer the mixture to a large bowl. Stir in the rolled oats until everything is evenly coated and a thick dough forms.
Fold in Chocolate Chips
Mix in the chocolate chips, saving a few to sprinkle on top.
Press into Pan
Line a 9×13 pan with parchment paper. Press the mixture firmly and evenly into the pan so the bars hold together well.
Top & Chill
Sprinkle the remaining chocolate chips over the top and lightly press them into the surface. Refrigerate for 2–3 hours until firm.
Slice & Store
Lift the bars out using the parchment paper and slice into squares or bars. Individually wrap them. Store in an airtight container in the refrigerator.

Prep Time: 10 minutes
Chill Time: 2–3 hours
Total Time: About 2 hours 10 minutes
Makes 16–20 bars
Approx. 220–250 calories per bar, depending on size.
A solid little fuel bar that travels well… whether the road ahead is a long stretch of highway or a long stretch of trail.

My husband truly loves his job. He delivers to some incredible restaurants and takes a lot of pride in taking care of his truck and doing the job well.
Some of the places he has to deliver to are pretty wild. Think tiny alleyways where he has to back a full truck and trailer in, tight downtown parking spots, and one particularly cool delivery where he actually drove into a cave to make the drop.
