Salted Cinnamon Ginger Bites

It is a bit chilly still here in the Midwest. I was craving a gingerbread flavor that would fuel me well. I created these little delicious gems!

Ingredients

  • 1 cup oat flour (blended oats)

  • 2/3 cup rolled oats

  • 1/3 cup vanilla protein powder

  • 2–3 tsp cinnamon

  • 1 tsp ground ginger

  • Pinch of sea salt

  • 1 tsp vanilla extract

  • 6 Tbsp nut butter

  • 2/3 cup maple syrup

  • 2/3 cup Greek yogurt

Chocolate Drizzle

  • Lily’s no sugar added chocolate chips

  • 1–2 tsp coconut oil

Instructions

  1. Mix dry
    Combine oat flour, rolled oats, protein powder, cinnamon, ginger, and salt.

  2. Mix wet
    Stir nut butter, maple syrup, Greek yogurt, and vanilla until smooth.

  3. Combine
    Mix wet into dry until a thick dough forms.
    (Chill if sticky, add a splash of milk if dry.)

  4. Roll
    Scoop and roll into bite-sized balls.

  5. Chill
    Refrigerate 20–30 minutes.

  6. Chocolate drizzle
    Melt chocolate chips with coconut oil and drizzle over bites.

  7. Set
    Return to fridge until chocolate firms up.

  8. Finish with a pinch of rock salt
    While the chocolate is still soft, sprinkle a light pinch on top of each bite.

Estimated Protein

Let’s do some trail math:

  • Protein powder: ~20–25g

  • Greek yogurt: ~15–18g

  • Oats + flour + nut butter: ~15–20g combined

Total batch: ~50–60g protein

If you make:

  • 12 bites → ~4–5g protein each

  • 16 bites → ~3–4g protein each
